Safflower is the everyday pan. Coconut is the days you want the tawa to smell like coconut — dosa, vegetables, a milder heat. It is a different seed, a different fat, a different job on the stove.

What the research actually found

The same Frontiers in Nutrition review (PMC13371722) compiles coconut as mostly saturated, with a low iodine value and low peroxide numbers in the literature table — the profile of an oil that stands up to heat better than a PUFA-rich seed oil.

That is useful in a kitchen. It is not a claim about blood sugar, germs, or anything a doctor would treat. Cold-pressed coconut still wants a closed bottle and a cool shelf. Heat-stable is not the same as immortal.
