Safflower oil for everyday cooking needs a dark shelf

Have you ever left a bottle of light cooking oil on the counter, in the sun, and wondered why it tasted tired a few weeks later?

Why everyday oil is a little more delicate

Safflower is the bottle many Indian kitchens reach for every day — mild, for tadka and the pan. That lightness comes with a catch the mill already knows: oils high in polyunsaturated fat oxidise faster than a coconut-style bottle. Light, heat, and air are not friends.

Refined supermarket oil is built to sit on a bright shelf. Cold-pressed safflower is built to be cooked with. It needs a darker corner of your kitchen.

What the research actually found

A July 2026 systematic review in Frontiers in Nutrition (PubMed Central PMC13371722) groups safflower with linoleic, PUFA-rich cold-pressed oils. Those oils keep more of what was in the seed than refined oil — and they also go rancid sooner if you leave them open to light and heat.

The same paper says to settle, filter, and pack in lightproof, airtight bottles, stored cool. That is how you protect a fresh press. It is not a licence to write “clinically proven antioxidants” on a shopping page.

Everyday tadka is a gift. Reusing the same oil in the kadai until it is tired is not.

Use it for everyday tempering and light frying. Do not treat it like a reuse oil for days of deep-frying. The review notes PUFA-rich cold-pressed oils oxidise more readily.

Where should I keep the bottle?

Cool, dark, tightly closed. Not next to the stove, not on a sunny windowsill. Recap after you pour.
